First Bock

I've attempted to formulate a decent HellesBock using Promash, and the goods
I have on hand. Here's what I've come up with. Any comments as to
positives and negatives in relation to the style would be appreciated....

MyBock

3 lbs Laaglander Extra Light DME
3 lbs Laaglander light DME
1/2 lb Crystal 10L Malt
1.5 lbs Light Clover Honey

1 oz Hallertauer (boiling, 60m)
1 oz Tettnanger Tettnang (finish ( 15m)

1 tube White Labs WLP838 Southern German Lager yeast

Note: I used the honey cause the 6 lbs of DME are all I have on hand and
the SG needed raising a bit.

One problem I see is that

One problem I see is that you're using about 80% Laaglander which is not very
fermentable, so you could end up with an overly sweet Bock. Also, what
Hallertauer are you talking about, and what is the alpha? Based on 5% AA for
Hallertauer Hers. the IBU's are at or below the minimum for the style, which
will accentuate the perceived sweetness. The honey will help this out a little,
but it's really not appropriate for the style.

As with any lager, I suggest a large starter. What temp do you plan on
fermenting?
